大目釋迦有綠寶石之稱，台東是產量及質量最出名的產地，由於大目釋迦是怕冷的熱帶水果，而台東的「乾、熱」氣候正好是生長的必要條件。黑潮暖流的經過，讓台東的冬天溫暖且乾燥，不容易有裂果，夏天西南氣流所引起的焚風剛好是釋迦甜的關鍵。除了日照，釋迦也需要充分的雨水，但釋迦怕積水，剛好台東的土壤排水性極佳，讓釋迦既能獲得良好的灌溉，又不會太過潮濕，可說是為釋迦量身打造的完美生長環境。

大目釋迦肉質飽滿、香甜多汁，帶有濃郁的風味，口感綿密、清甜不膩，且富含大量的營養成份，堪稱釋迦界的人氣王。頂級的大目釋迦從外觀看鱗目大，果肉自然厚實飽滿，當果肉呈現軟綿綿的雪白色時吃起來最美味。

收到釋迦時，可以輕輕按捏釋迦，如果按起來軟軟的話，即可食用。熟成後放入冰箱保存，可以延長保存期限。果實還未完全軟熟前，不能放進冰箱冷藏，否則就會停止進展到軟熟的階段。

保存方法：收到時建議常溫放置軟化以後冷藏，冷藏所產生的表皮黑化是正常現象，軟化以後請盡快食用。
